Central Vietnam offers an array of traditional cuisine including imperial dishes from Hue, like sticky rice wrapped in palm leaves, once reserved for emperors and now enjoyed by all. Taste cau lau, Hoi An’s udon-like noodles, my quang homemade yellow rice noodles served with pork chops or chicken slivers in shrimp or pork stock and an open faced shrimp dumpling in thin rice paper rolls known as white roses. Legend has it that all three items originated in Hoi An. Today you’ll have no trouble finding them around town and at The Nam Hai. Try our Nam Hai Culinary Adventure, a Vietnamese cooking class for up to five participants. Follow our chef around the frenetic local wet market before continuing on to pick herbs and vegetables in the Nam Hai’s organic garden. Mango Room
Owner and local celebrity Chef Duc survived the boat migration in the 70’s, getting first to Malaysia eventually growing up along the Texas-Mexico border. Now back in his homeland, Duc infuses Vietnamese classics with fresh mangoes and passion fruits as well as a few Texan touches.
